1 ½ cups, all-purpose flour, spooned and leveled
2 tbsp, granulated sugar, or to taste
2 tsp, baking powder, for lift
½ tsp, baking soda, for extra fluffiness
¼ tsp, salt, enhances flavor
1 ¼ cups, milk, whole milk recommended
1 large, egg, room temperature
2 tbsp, unsalted butter, melted and cooled, plus more for cooking
1 tsp, vanilla extract, for aroma and taste

The Process.

Step 1: In a large bowl, whisk together the dry ingredients: flour, granulated sugar, baking powder, baking soda, and salt.

Step 2: In a separate medium bowl, whisk together the wet ingredients: milk, egg, melted butter, and vanilla extract until well combined.

Step 3: Pour the wet ingredients into the dry ingredients. Stir gently with a whisk or spatula until just combined. Do not overmix; a few lumps are fine and contribute to fluffiness. If using optional mix-ins like chocolate chips or blueberries, gently fold them in now.

Step 4: Heat a lightly oiled griddle or non-stick frying pan over medium heat. A good test is to sprinkle a few drops of water; if they sizzle and evaporate immediately, the pan is ready.

Step 5: Pour ¼ cup of batter for each pancake onto the hot griddle, leaving some space between them.

Step 6: Cook for 2-3 minutes per side, or until golden brown and bubbles form on the surface, and the edges look set. Flip carefully and cook for another 1-2 minutes on the second side, until golden brown.
